Request: Connectors for Zenoh

Hi all,

I was wondering if it is worthwhile to add support for [Zenoh](https://zenoh.io/). Personally, I would like to see the support, and it also could be a nice opportunity to get some recognition from [SDV](https://sdv.eclipse.org/) since they are pretty invested in Zenoh. I can try to contribute in my spare time, but it would be nice to know if you guys are interested before I put in any effort. Let me know what you think :)

The issue names no files, tests, or entry points. First determine whether Zenoh support is wanted and identify the existing connector patterns to follow; done would require an agreed scope and a working Zenoh connector, but the issue does not define either.
