### Motivation
Currently, Paimon supports CDC Ingestion for MySQL, Kafka, and MongoDB. I'd like to further implement data ingestion for more databases using CDC.

Start with the CDC ingestion documentation linked in the issue and review how the existing MySQL, Kafka, and MongoDB sources are supported. Choose one unchecked source, such as Postgres, and define the connector scope, tests, and documentation updates needed for that source to be considered supported.
