The site at https://maven.apache.org/plugins/maven-dependency-plugin currently doesn't state which archive formats are supported for goals "unpack" and "unpackDependencies". IIUC it should be all the formats listed in https://codehaus-plexus.github.io/plexus-archiver/. Would be good to add that link.
