Add integration tests for Iceberg Source Client

We need the testing here to be on par for what we're doing for Hudi and Delta. There should be insert, update, delete rows along with drop partition cases. If there are any table services like clustering and compaction, we will want those covered in these tests as well to make sure we're accurately capturing the changes from them.
