Docs: Implementation Status page missing Table Spec V3 breakdown

The [Implementation Status](https://iceberg.apache.org/status/) page (site/docs/status.md) only breaks down Table Maintenance/Update/Read/Write Operations and Catalog operations into V1 and V2 sections. There's no V3 section anywhere, even though:

The [Table Spec](https://iceberg.apache.org/spec/) is already versioned to format version 3 (row lineage, deletion vectors, etc. are ratified).

Start with site/docs/status.md and compare its existing V1/V2 operation and catalog breakdowns with the linked Table Spec. Identify the ratified V3 capabilities that need representation, then update the Implementation Status page so it includes a consistent V3 section covering the relevant areas.
