Flink quickstart MinIO image defaults break on arm64

I'm following https://iceberg.apache.org/flink-quickstart/ to set up a local Flink cluster on a M2 MAc. However, `minio/minio:latest`(resolved to `RELEASE.2025-09-07T16-13-09Z`) exited with code `139`.

Start with the Flink quickstart at https://iceberg.apache.org/flink-quickstart/ and inspect where the `minio/minio:latest` image is configured. Reproduce the setup on an arm64 machine or equivalent environment, then verify that the quickstart's MinIO container starts successfully with an arm64-compatible default.
