Catalog Conformance Testing Suite

### Feature Request / Improvement

Right now, it appears that every catalog has its own test suite. A shared conformance test suite allows all catalogs to run against a shared suite to ensure identical functionality.

iceberg does this through the CatalogTests and pyiceberg has a similar suite.

Start by locating the existing test suites for each catalog in iceberg-go and compare their coverage with Iceberg's CatalogTests and pyiceberg's conformance suite. Done means a shared conformance suite exists and can run against all catalogs while checking identical functionality.
