[Improvement] Add label with http server metrics

Currently, http server metrics tag only contain `operation`, but different catalog have different performance, maybe should add tag key like `catalog`.

Determine how catalog identity is available for those metrics and confirm the expected tag behavior with maintainers. Done means metrics distinguish performance by catalog without breaking existing operation tagging, with coverage for the new behavior.
