[Improvement] Improve script `update-java-doc-version.sh` to support modify python doc and other version change.

It's known that `update-java-doc-version.sh` only support changed java document version, according to https://github.com/apache/gravitino/pull/5405, more are needed to change when upgrading the Gravitino version, so we ought to change the script to adapt to the requirement.
