[VL] Support Spark 4.1.x

### Description

Since Spark 4.1.0 was released on December 16, 2025, we should also add support for Spark 4.1, following the addition of the Spark 4.0 unit test framework in https://github.com/apache/incubator-gluten/pull/10725.
