[filesystem] Migrate to AWS SDK for Java v2

### Motivation

Fluss currently uses AWS SDK for Java v1 which is in maintenance mode since 07/2024 and reaches [end-of-support on 31/12/2025](https://aws.amazon.com/blogs/developer/announcing-end-of-support-for-aws-sdk-for-java-v1-x-on-december-31-2025/).

### Solution

Migrate `fluss-fs-s3` to [AWS SDK for Java v2](https://docs.aws.amazon.com/sdk-for-java/latest/developer-guide/migration.html).
