Being able to change those values so I do not need to create a new offering every time something needs to be adjusted.

There is no way to adjust anything besides the name, description.

Start with the Service Offerings component and inspect the existing edit flow, which currently permits changing only the name and description. Define the supported updates for compute, network, and disk offerings, then verify that each requested value can be changed without creating a new offering.
