[Task][Maintenance]: Maintain Apache Beam Quest Labs

### What needs to happen?

We need to ensure that the labs in [the quest](https://www.cloudskillsboost.google/quests/310) continue to work as intended over the long term.

Don't think there's a programmatic way we can do this, so probably best is to revisit these every 4-6 months and ensure that they WAI.
