[Task]: Migrate checked in Colab notebooks to utilize new notebook integration tests

### What needs to happen?

#26690 adds a script to test notebooks. We should now make sure that existing notebooks in our repository utilize this by adding a `.spec` file and ensuring they work appropriately.
