Description
By pointing to /etc/astra-sim, we must use sudo permission to run the ./build script or:
mkdir: cannot create directory ‘/etc/astra-sim’: Permission denied
mkdir: cannot create directory ‘/etc/astra-sim’: Permission denied
mkdir: cannot create directory ‘/etc/astra-sim’: Permission denied
mkdir: cannot create directory ‘/etc/astra-sim’: Permission denied
mkdir: cannot create directory ‘/etc/astra-sim’: Permission denied
mkdir: cannot create directory ‘/etc/astra-sim’: Permission denied
I propose using "${SCRIPT_DIR:?}"/log as the log folder.

Research direction
Locate SIM_LOG_DIR and the ./build script, then inspect where the log directory is created. Update the log location so the build can run without sudo, and verify that the build completes without permission errors.
