[Feature Request] Release new version to support Spring Cloud 2025.1.2 (compatible with Spring Boot 4.x)

## Problem / Motivation
The latest `2025.x` branch has already committed code adapting Spring Cloud **2025.1.2** (Oakwood, compatible with Spring Boot 4.0.x / 4.1.x), but no official release has been published yet.

Many users who upgrade to `Spring Cloud 2025.1.2 + Spring Boot 4.x` cannot reference a stable SCA BOM from Maven Central, and are forced to build from source or use `-SNAPSHOT`.

## Request
Could the maintainers please cut a new release (e.g. `2025.1.2.0` or follow the existing versioning scheme) that officially supports:
- Spring Cloud **2025.1.2**
- Spring Boot **4.0.x / 4.1.x**
