Assign Additional Option to specific tickets

We have tickets of different categories, and also Workshops (fixed quantity) that can be bought separately for each ticket.
Now we have to create 2 categories for each ticket type : without workshop, with wokshop , with the obvious problems of over selling
Additional Options seemed great solution, but there's no way to create an order of 4 tickets, and 2 workshops ( additional option) and assign which of those 4 tickets have that additional option.
Another point is that we also should be able to set the total quantity of each Additional Option

Allow the user to specify which ticket includes the additional option, and specify this in the attendee mail.
