Why is this a problem?
Feature Introduced in https://github.com/WordPress/gutenberg/pull/38892;
the Keyboard shortcut for selecting text across multiple blocks (without selecting all of the blocks' text) should appear at https://wordpress.org/support/article/block-editor-keyboard-shortcuts/
Should probably live in under the selection shortcuts section.
There is also an issue made on Gutenberg to document it there https://github.com/WordPress/gutenberg/issues/41168
(please visit GitHub issue to ensure it is being listed under a consistent section (likely selection).
also note this was tracked in https://github.com/WordPress/Documentation-Issue-Tracker/issues/302 under the video/screenshot section
