Please, can you either figure out with the game devs what triggers it and stop doing that (only game I play that this happens and only in that game mode) or apply the Mesa fix to your driver repository?

Start by reproducing the crash in Northgard's challenge mode after one or two hours, using the reported Vega 64, Mesa 21.3.2, and kernel 5.11 environment. Read the linked kernel bug 211111 and review the Hardware Gist and compatibility report for relevant evidence. Done would require identifying a Proton-side or driver-related fix and confirming that the driver crash no longer occurs.
