Even when AZERTY layout is selected, any Unity game will use the QWERTY layout because it's first in the system layout order.
It seems like a Unity bug but it could be worked around through proton keyboard re-order.

1. • With system keyboards layout ordered with QWERTY then AZERTY,
2. • select AZERTY,
3. • Unity game uses QWERTY,
4. • change system keyboard layout order to AZERTY first, you might select QWERTY,
5. • Unity game will use AZERTY.
