Description

Chat analytics are currently owned by lightning: we drive metabase and the analyics from the main lightning db

We should consider a dedicated analytics DB which stores requests from clients which opt-in to analytics (right now that's just openfn staff, we should work how to expand this)

Should we track anything from opt out? It might make sense to count anonymouse requests into the different services
