Description

@ichaib would love to know when our users have signed up, but we do not have a created date in our users tables yet. Currently, the workaround is to use the created date of a consumer tied to the user.

Research direction

Start by locating the users table and its Scala model or persistence entry point, then compare it with the consumer record's existing created date. Confirm how user data is exposed and add a signup timestamp that is populated for new users; done means the user record provides that date without relying on a linked consumer.
