Need to update the TWS non-stationarity COG

Description
We'd like to update the underlying data for lis-tws-nonstationarity-index. The COG is here: s3://veda-data-store-staging/EIS/Global_TWS_data/DATWS_nonstationarity_index_v2.cog.tif. None of the metadata is changing - only the values in the raster itself. Could we just swap out the COG on the veda-data-store-staging S3? Or should we upload a "_v3" and update the configuration files such as data/step_function_inputs/lis-tws-nonstationarity-index.json?
