Event System (Metrics)

### Description
The linked Notion Epic contains a list of insights we'd like to be able to report on. To do this we need to have event tracking in place that can be used to get to those insights. This epic contains issues that are aimed at improving our metrics coverage by adding properties to existing events and/or tracking completely new events.

### Helpful hints:
Use the new MetaMetrics provider, the useNewMetatMetricsEvent hook, or the fragment system to do this. Do not use the old MetaMetrics provider.
