Description

Is your feature request related to a problem?

It would be good to define the default sorting.
Meaning: Specify property and sort-order (ascending, descending)

If a sorting is defined, the UI shouldn't allow user-sorting.

Research direction

No file, test, or entry point is named. Start by locating profile sorting and the UI's user-sorting behavior, then determine where the default property and ascending/descending order should be defined. Done means profiles have the configured default order and user-sorting is unavailable whenever that configuration exists.
