Description
After 0.0.6, jsonb fields are converted to varchar, which causes a ProgrammingError when trying to output to target-snowflake, since in snowflake the field is modeled (correctly) as Variant

Research direction
Start by tracing how PostgreSQL jsonb fields are typed after version 0.0.6 and reproduce the failure when output is sent to target-snowflake. Done means jsonb remains compatible with Snowflake's Variant modeling instead of becoming varchar, avoiding the reported ProgrammingError.
