Cannot find MATLAB with CMake 3.25

Description
For some reason, while configuring MParT using CMake from home brew on a Mac, we couldn't find Matlab. However, when I downgraded CMake from the home brew-installed 3.25 to a custom built 3.23-rc2 MParT seemed to configure just fine.
