Kong SAML Plugin provide config example for Signing AuthN request from SP to IDP

### What happened?

I wanted to see an example config when we need to sign the Authentication request from Kong to Azure. There is a config settings called `request_signing_key` and `request_signing_certificate` but it's not clear how those values would be generated.

Please provide an example on how to set those values.
