📝 Documentation: Create and link to auto-updated example repositories

### Overview

Folks want to see what templated repositories look like in practice. This repo has extra stuff added on top of the Everything preset and so isn't ideal for that.

I have the following repos set up as examples:

I'm going to:

- [x] Onboard them to CTA v2
- [x] Onboard them to the CTA v2 `npx create` migrate flow to stay up-to-date automatically
* This will require #1965
- [ ] Link them to docs somewhere in this project

Marking as blocked pending setting up that automated migration flow.

This can serve as a precursor to #1193.
