Revise sentry configuration and troubleshoot allowance consumption

### Description

We are still burning through our sentry allowance too fast.

we'll need to:
- identify what requests are burning through our allowance
- reconfigure sentry
- possible sdk upgrade [#4723](https://github.com/FlowFuse/flowfuse/issues/4723)
