### Description
As part of the UX when creating Projects and in the upcoming work of changing Project Types (#595), I find there friction in the fact that we have stacks dependent on their Project Type. We mostly use Stacks to differentiate between Node-RED versions, having labels of "Node RED 3.0 Small" seems odd for a Stack name, given that the "Small" should be implicit if I've just chosen a "Small" project.
For #595 this means that a user cannot simply switch Project Type, they also need to re-select the Project Stack too, a user should just be able to upgrade their Project Type on it's own.
I'm sure there are technical limitations on why this is the case, from a UX standpoint it causes frustration and confusion.

- [ ] Stacks become project type agnostic, e.g. Users can switch project types, without having to redefine the relevant Stack.
