Delete all Everest files from an installation

If I want to uninstall Everest or use it with a different installation, I would like to have the Celeste folder like it was before I installed Everest. The Uninstall button just replaces Celeste.exe with its original but doesn't get rid of all the downloaded files, including the dlls and other library files. However, I don't know which files were created and which files were in the original installation, and I'd prefer not to have to reinstall the entire game.
