subset_data: --crop flag is annoying

Description
I find myself frequently having to rerun `subset_data` because I forgot to add the `--crop` flag. I think it would be better if the user were required to specify either `--crop` or `--no-crop`. Even better if those were renamed `--crops-2` and `--crops-all`.
Adding "next" label so we can discuss at a CTSM SE meeting.
