docs outdated after pm maint and/or recent ace changes?

@meng630 and @inmani and @mahf708 found current docs to be not working. Further, @inmani reported that the python env instructions don't seem to be working :/

we will update the docs once we identify the fixes

- training on E3SM amip data --> NaN in loss
- uv is struggling to a get lock on some env (maybe due to missing flock somewhere?)
