What problem will this feature address?
The nginx container Dokploy uses when deploying using Nixpacks has log level set to debug it seems which makes the logs very noisy.

Make log level configurable via UI or use error as level by default
Describe alternatives you've considered
Having an nginx config file and corresponding mount point per project is tedious
