Rioxarray has more robust reproject and reproject_match functions: https://corteva.github.io/rioxarray/stable/rioxarray.html#rioxarray.raster_array.RasterArray.reproject

We should at the least get rid of the internal logic and wrap rioxarray.

Alternatively, we drop the functions entirely.
