Possible to get more information on the protocols and UUIDs for services/characteristics?

I guess I'm specifically looking for how the protocol works for "Domyos 900" (local Bluetooth name shows up as `Domyos-Bike-1255`).

I've managed to connect to the device successfully, but I'm guessing it's waiting for some initialization message before starting to send out the actual data?

Basically, having a list of UUIDs, services and characteristics for the various units would help a lot and save us from having to reverse-engineer the protocols.
