Update metrics series names

Metrics names are currently very debug so they're easy to find while testing - these should be updated to follow the [semantic conventions](https://opentelemetry.io/docs/specs/semconv/general/metrics/) otel outlines on their docs.

Review the repository's existing metrics names and compare them with the linked OpenTelemetry semantic conventions. Update the names to follow those conventions, then verify that the resulting names are consistent with the documentation.
