Include Autotailor in Workshop material

#### Description of problem:

While scap-workbench can be used to tailor profiles and to scan, we would like to stop referring to it, and to promote autotailor and possibly other solutions (Insights, oscap-wrapper (just an idea as of 2023), Image Builder).

#### Steps to Reproduce:

Review https://github.com/ComplianceAsCode/content/blob/master/docs/workshop/lab2_openscap.adoc and check that references to scap-workbench are too frequent.

Review docs/workshop/lab2_openscap.adoc and inventory its references to scap-workbench. Check the requested autotailor and possible alternative-tool references against the issue description, then update the workshop wording so it no longer over-promotes scap-workbench and clearly reflects the chosen alternatives.
