Gallery app home template text not binding under Windows App Sdk

### Describe the bug

When running the wasdk Gallery head under the latest `main`, the [`ControlItemGridViewTemplate`](https://github.com/CommunityToolkit/Tooling-Windows-Submodule/blob/cba322e223f936e38f43ad54a04726c3b93d03ca/CommunityToolkit.App.Shared/Styles/ItemTemplates.xaml#L24) used on the `GridView` [in the `GettingStartedPage.xaml`](https://github.com/CommunityToolkit/Tooling-Windows-Submodule/blob/cba322e223f936e38f43ad54a04726c3b93d03ca/CommunityToolkit.App.Shared/Pages/GettingStartedPage.xaml#L169) is failing to bind to the data in the provided SourceItems.


This behavior is not present when running the gallery under UWP.

### Steps to reproduce

1. Clone the repo
2. Generate the gallery solution, include any component and the wasdk multitarget/head.
3. Build and deploy the wasdk gallery
4. Upon launch, observe the missing text.
```

### Expected behavior

Binding should work as expected, should align with previous behavior (before WindowsAppSDK 1.6) and the behavior on UWP.
