[Workshop] Add AI discussion to Checkpoint

# Workshop Request

CHeckpoint-specific AI guidance may or may not exist already in the prep material. [There is a ticket for it already.](https://github.com/CodeYourFuture/curriculum/issues/1895) if it has not been made yet you would need to complete that ticket first.

## What are the key topics that will be covered in the workshop?

- [ ] What are the key guidelines around AI in the Checkpoint
- [ ] What is acceptable use of AI and not acceptable
- [ ] How do we check whether AI is disrupting or supporting our learning
- [ ] How do we expect AI use to evolve from how we used it in ITP, if at all?

## What are the topics that will **not** be covered in the workshop?

General discussion around what AI is or higher level things. We are focusing on AI use in the context of our education.

## Any other notes?

[The same work was done for ITP](https://github.com/CodeYourFuture/curriculum/pull/1896) so you might find a good example of this workshop there. IT does need adapting for SDC as there are references to ITP specific guidance there. But the goal is the same.
