@/civicsignalblog - Rename collections specific to an application to include application name in slug

Since we have migrated the `CivicSignalBlog` CMS and allowed it to support multiple applications we need to standardize the way we name collections specific to an application e.g. `posts` should be renamed to `research-posts`

Renaming these collections will require creating a migration that will ensure the data is properly rendered on the frontend and can be managed in Payload CMS.
