Improve status of current Guide

As part of the improvements, we want to also update our guide. Adding this issue in case someone wants to contribute with more ideas.

Current guide: https://clickhouse.com/docs/integrations/dbt/guides

Changes to be done:
- Update `dbt init` to use proper models that are representatives of the usage of this adapter. Users shouldn't need to recreate everything to get started.
- Update the guide to use, if possible, https://github.com/dbt-labs/jaffle-shop.

Any ideas/contributions are more than welcome!

Start with the current guide at https://clickhouse.com/docs/integrations/dbt/guides and review the dbt init instructions and models they create. Compare the setup with dbt-labs/jaffle-shop, then update the guide so it uses representative models and, if suitable, that example project; done means users can follow the guide without recreating the initial setup.
