tests: add simple 5 minutes run of Gossamer to detect panics

## Task summary

Suggested by @kishansagathiya [here](https://github.com/ChainSafe/gossamer/pull/2408#issuecomment-1074050165).

Running Gossamer with a simple configuration and syncing for a few minutes, detect if it crashes would do.
We should add a workflow just for this ideally.

This should be done after the tests directory is refactored such that we can launch it with a context from a Go test.
