[stress testing] Dynamically set chart.yaml version based on deploy script git version

Instead of dealing with breaking changes and force migrating people when we change addons AND the script, we should dynamically set the addons dependency from the deploy script itself, that way any version of the script will always pick the right addons version it works with. CC @richardpark-msft
