Docs don't match experience of az cli version 2.32.0

This document is incorrect in the location where is says the AZ CLI will automatically install the CLI extension. Not only does it not, but the `app-insights` sub command is not the name of the extension. The flow of the CLI compared to the docs makes the experience quite horrible.
