[Task] Change the default values to align with the basic scenario

### Description

The default values should align to the description of the basic scenario. Currently there are a few default values to change to match "basic".

### Definition of Done

```markdown
- Storage account type default matches basic
- AppInsights should be turned on for basic / documentation updated to reflect that
- Any other settings that don't match basic description should be updated
```
