Related to a similar issue AlexsLemonade/exercise-notebook-answers#57
We should set a width parameter in the `make-live.R` workflow for consistent rendering of notebooks (as noted in [this comment](https://github.com/AlexsLemonade/exercise-notebook-answers/issues/57#issuecomment-779893173) on that issue), similarly to what was done in the `refinebio-examples` repo (AlexsLemonade/refinebio-examples#402).

> We did this for the "examples" but it was a bit of a hack, so doing this again would probably be similarly hackish.
which suggests to me that AlexsLemonade/refinebio-examples#402 is probably a good place to start when tackling this issue.
