Latest Chromium Version Always A Build # Behind Latest Version

So far I'm still just evaluating the thorium windows version browser, one thing that I've noticed is the fact that even though the latest version is up to date as far as the thorium browser itself is concerned, it's always at least one version behind the official chromium version, for the sake of security wouldn't it be safer to have the same exact version of official chromium version included in the thorium browser ?
