[Feature]: Provide support for Anthropic Bedrock + Vertex support

We currently support the base anthropic client, but the Bedrock and Vertex clients are untested/undocumented.

Test that these work and provide updated documentation. If they don't work, then update the AgentOps providers to patch them.
